Flow chart for Frozen Hake Products (Exports)

  • Hake is caught by means of long-line trawlers

  • Hake is Headed & Gutted at sea on vessel

  • Vessel discharges H&G Hake in bins at Gendev jetty, ice is then added to the bins

  • Receive bins at factory in temporary storage chiller, ice is added again

  • De-ice bins

  • De-scale / scratch by hand

  • Machine Washing (using Municipal water)

  • Sorting / grading (add ice)

  • Filleting, Remove pin bone, Trimming by hand (skin on)

  • Cut into portions and packed as per client orders in marked cartons

  • IWP (Individually Wrapped Product)

  • INT (Interleaved)

  • Place cartons inside freezer pans

  • Plate freezing à Skin on, pin bone out fillets are diverted to flow

  • Strap

  • Metal Detector

  • Container loading

Flow chart for Frozen Skin On, Pin Bone Out Hake Fillets (Exports)

  • Skin on, pin bone out fillets received from step 12 of previous flow chart

  • Remove plastic packaging & shatter to loosen

  • Place fillets in dipping basket

  • Dip in glaze tank

  • Place on packaging table

  • Repack in interleaf plastic in carton base

  • Add lid & Strap

  • Blast Freeze

  • Metal Detector

  • Temporary Cold Storage

  • Container loading

Flow chart for Frozen Horse Mackerel Products (Exports)

  • Horse Mackerel is caught by means of a trawler – fish is pumped into tanks at sea

  • Whole round horse mackerel is discharged at the Gendev Jetty and contents of each Refrigerated Sea Water (RSW) hold in pipe is pumped to holding tanks at factory

  • Pump in pipe to factory

  • Receive at factory onto transport belt

  • Automatic grading table (spray Municipal water)

  • Transport belt to packing tables

  • Finger laid or jumble packed into bailer bags, pack in cartons

  • Blast freeze

  • Add carton lid & strap

  • Metal detector

  • Temporary Cold Storage

  • Container loading

  • Dispatch

Individually Quick Frozen (IQF) Horse Mackerel Product

  • Same flow as Horse Mackerel (step 1-5)

  • Horse Mackerel is caught by means of a trawler – fish is pumped into tanks at sea

  • Whole round horse mackerel is discharged at the Gendev Jetty and contents of each Refrigerated Sea Water (RSW) hold in pipe is pumped to holding tanks at factory

  • Pump in pipe to factory

  • Receive at factory onto transport belt

  • Automatic grading table (spray Municipal water)

  • Transport belt to Spiral machine

  • Fish undergo IQF process for about 70 min and comes out at -24°C

  • Packed into 1kg bags, weighed and packed into master 10kg bag

  • Metal detector

  • Temporary Cold Storage

  • Container loading

  • Dispatch

  • Receive frozen snoek from vessel

  • Cold Storage

  • Place into vaccum bags

  • Vacuum and heat seal each bag

  • Temporary Cold Storage

  • Loading

  • Dispatch

 

Quality checks are done in all of the processes to ensure products adhere to the requirements of the governing bodies.
